How to make a unicorn cake

If you’re going to be making a unicorn cake for the first time, you may be feeling a little bit nervous about the end result. We have sourced a great recipe from Delicious, which we think you’re going to love. Combine it with the right cake toppers and you’re going to have parents lining up for you to make their child’s cake.

Ingredients:

190g softened, slightly salted butter

250g caster sugar

5 eggs

5 egg whites

Swiss meringue buttercream

The zest of one lime

155g plain flour

1 teaspoon of vanilla extract

Raspberries

To decorate:

Pink, blue, green, and yellow food colouring

You may also want to add some glitter or gold hundreds and thousands

Create the eyes using black fondant icing if they’re not included in your cake topper

How to make the cake:

  • You need to begin by preheating your oven to 180°C. You will need four, small rounded cake tins, which are 16 cm in diameter.
  • Make sure you flour and butter these.
  • Next, separate the eggs. The egg yolks should be beaten in a large bowl with the vanilla and sugar until they are fluffy and pale.
  • In a separate bowl, you should beat the egg whites until soft peaks are formed.
  • Whisk some of the whites into the first mixture.
  • Then, gently fold the rest of the whites in with a soft spatula.
  • Add the flour, and then whisk the mixture again.
  • Add the lime zest to the mixture.
  • Now, divide the mix between the cake tins evenly and use a soft spatula to smooth the tops.
  • Bake the cakes for approximately 10 minutes. They should be lightly golden.
  • Leave the cakes to cool for a few minutes. You will want to turn them out while they are still quite hot. You can then let them cool on the rack.
  • Now, you’re going to make the swiss meringue. Grab a metal bowl and place it over a saucepan of simmering water. You will want to heat the caster sugar and egg whites in this. At the same time, use an electric beater on medium speed to beat the mixture. The speed should be increased gradually until the mixture gets to roughly 50°C.
  • You then need to grab another bowl to pour the mixture into. Continue to beat the mixture until it has cooled fully. The meringue should be shiny, supple, and smooth.
  • Take around two-thirds of the mixture and add the softened butter. Continue to beat the mixture for three minutes. You should have a texture that is creamy and firm.
  • The buttercream for the swiss meringue should now go in the fridge for 30 minutes.
  • The one-third of meringue that was leftover should also go in the fridge. You will be using this to create the mane.
  • Now, you can start to put the cake together. Spread a layer of buttercream over the first cake. Put a few raspberries on top. Keep repeating this process until the final layer is your last round of cake.
  • Next, grab the buttercream and cover the whole cake with it.
  • Put it in the cake for 15 minutes
  • Add a second layer of buttercream, and smooth the surface. You need it to be even.

Decorating your cake:

You should grab the swiss meringue mixture that you set aside for the mane. Divide it into five different bowls. Leave one whiter and colour the others. Use pink, blue, green, and yellow food colouring, and mix each colour well.

On a piece of plastic wrap, make five strips of colour, side-by-side. Roll this up, and place it into a piping bag with your choice of nozzle. Place in the fridge.

Plant the horn and ears on the top of the cake. As you can see, you can easily get these as cake toppers, saving you the hassle of having to make them.

Pipe the rainbow meringue around the ears and horn, creating a mane that goes down the back of the cake and then comes back around.
Use black fondant to make the eyes if these have not been included in your cake topper, and place these on the side.

Finish off with some gold edible glitter if you wish!
